Party Food and Drink

Running around today getting food set up for the party.  I got some roast beef sliders (mini burgers)  and some coleslaw.  I’ve also decided to go back to cupcakes: they will be bigger for each guest to eat.  I got some S’mores cupcake mix for the folks wanting cake with no alcohol.  I also got some potato chips, onion dip, pickles cheese and crackers.  There should be plenty to eat.

Drinks are Pepsi, Diet Coke and Sprite.  So, I think I’m almost set.  It’s fun getting all this together, but it can be exhausting too.  And expensive.

Right now, it looks like I’ve got between 25-30 coming to the party.  I know you’ll be there too – in spirit.  If you were here, you’d help me make the S’mores cupcakes.  You’d help me get the food out for all the guests.

I do have friends helping me with this. Our school secretary, Theresa, is bringing mini shepherd’s pies.  Shepherd’s pie is British comfort food.  Do you like hamburger, mashed potatoes, steak sauce and carrots?  Well, if you do, you’ll like Shepherd’s Pie.  People make Shepherd’s pie with different ingredients: lamb, ground turkey, cheese, onions, green peppers. But its basically a meat casserole topped with mashed potatoes.  The crust is optional too.  Here’s how you make mini shepherd’s pies…

I also have another friend who is willing to go out to get extra food if we run out.  Grandma called awhile ago to ask if I needed anything.  Yes, life is good!  This party is going to be wonderful!
